Exploding cream

Hello, I made some cream and stored it in a plastic jar and a week later I heard a noise coming from the jar so I opened it and cream exploded everywhere. I don’t know how that happened. I started looking up info online but not sure where to start. I did read something about “hydrogen swelling.” Is that what happened? I did use acidic ingredients. Did that cause it? Did I not let the cream cool down enough after the formulating process? How can I stop it from happening again? Thanks – Self-taught chemist
